SWEET POLENTA DROP SCONES

Ingredients
1/4 cup polenta
3 tablespoons plain flour
1/4 teaspoon bi-carbonate of soda
3 tablespoons Buderim Ginger Ginger Refresher
125mL natural or Greek-style yoghurt
59g egg, separated
Ricotta, Banana & Ginger Cream
small [70g] ripe banana
200g tub ricotta cheese
Buderim Ginger Ginger Refresher
Method
- In a small bowl whisk together polenta, flour and bi carb soda to aerate ingredients.
- Secondly, whisk together Ginger Refresher, yoghurt and egg yolk.
- Using a rubber spatular pour Ginger Refresher mixture into flour mix and mix until ingredients are just combined; over mixing will toughen and produce a rubbery drop scone. Cover with plastic wrap and allow to stand for 30 minutes.
- Beat egg white until stiff, but not dry, add to batter, using a metal spoon fold into batter until no trace of egg white in mixture.
- Gently heat a non stick or regular frying pan, brush with a little melted butter.
- For each drop scone add a generous tablespoonful of batter to frypan [do not over crowd frying pan as it will be difficult to turn over drop scones].
Cook until bubbles appear on surface, about 1 to 2 minutes, turn over and cook other side for about 1 to 2 minutes until cooked through and golden brown in colour. Repeat with remaining batter. - Place in a clean, dry tea towel to keep warm whilst cooking remaining drop scones.
Serve on warm plates with Ricotta, Banana & Ginger Cream or yoghurt and a spoonful of your favourite Buderim Ginger Original Ginger Marmalade or Buderim Ginger Sweet Ginger Sauce.
Ricotta, Banana & Ginger Cream
Mash banana, add to ricotta cheese with Buderim Ginger Ginger Refresher to taste. Whisk until light and fluffy.
Helpful Notes
Using a metal spoon when adding egg whites cuts through mixture ensuring egg whites retain their light airy mass.
A standard Australian Metric 250mL cup & 20mL tablespoon measuring sets are used.
New Zealand Metric tablespoon measure = 15mL or 3 teaspoons
