Easy Chicken And Ginger Salad

Ingredients

  • 1 cup rocket
  • 1 cup baby spinach
  • 1 cup blueberries
  • 1 cup quarter cucumber
  • 1 cup cooked quinoa
  • 100g grilled halloumi cheese
  • 100g grilled chicken
  • 1/4 cup pecans
  • 1/4 cup pepitas
  • A heaped spoonful Australian Ready Cut Ginger
  • 1/8 cup apple cider vinegar
  • 1/8 cup extra virgin olive oil
  • Juice of 1 lime
  • Salt and pepper
