Chocolate Ginger Truffles

Ingredients:
- 150 grams Buderim Ginger Dark Chocolate Ginger
- 125 grams ginger nut biscuits
- 1/4 cup Buderim Ginger Naked Ginger
- Dash of oil
Method:
- Process ginger nut biscuits with Naked Ginger till a fine crumb forms
- Melt Dark Chocolate Ginger over a double saucepan, until just melted. Let cool
- Process Dark Chocolate Ginger until lightly chopped (we have used a stick mixer)
- Add Dark Chocolate Ginger melted mixture, to Ginger Crumbs
- Add a dash of oil if too firm
- Using wet hands, roll a teaspoon of mixture into balls
- Set in fridge
For an extra delicious treat, roll the balls in melted chocolate to finish.
