Ingredients:
- 2 cups plain flour
- 1 & ½ teaspoons baking powder
- ¾ cup castor sugar
- 3 eggs
- 2 & ½ teaspoons vanilla extract
- ½ cup chopped Buderim Ginger Dark Chocolate Ginger
- ½ cup blanched almonds
- ½ teaspoon cinnamon
- ½ teaspoon ginger powder
Method:
- Preheat Oven to 160°C
- In a large bowl place plain flour, baking powder, sugar, almonds, spices & Dark Chocolate Ginger
- Add the eggs and vanilla and mix well to form a dough
- Divide dough in two
- Place dough on a lightly floured surface and knead until smooth
- Shape into logs and flatten slightly
- Place on tray lined with baking paper and bake for approximately 35 minutes
- Remove from oven and allow to cool completely
- With a sharp knife, cut the logs into 5 mm thin slices, place on baking tray lined with baking paper
- Bake for 10 – 15 minutes until dry and lightly golden & crisp
