Dried ingredients:
- 300g. all-purpose flour
- 75g. white sugar
- 30g. dried coconut flakes
- 1tsp. baking powder
- 1tsp. baking soda
- ½ tsp. salt
Wet ingredients:
- 1 cup butter milk
- 1/3 cup melted butter
- 2 eggs
- 1 tsp. vanilla essence
Fruit:
- 100g. small cube of apple (any type that you like)
- 75g. roughly chopped Buderim Dark Chocolate Ginger
- 75g. roughly chopped Buderim Naked Ginger
Topping:
- 50g. roughly chopped Buderim Glacè Ginger
- Dried coconut flakes
- Decorating sugar
Method:
- Lay 12 muffin cups in the muffin pan and turn the oven on to 175c fan force.
- Mix all dried ingredients together by using hand whisk mix them together until well combined.
- Mix all wet ingredients in a big bowl then pour all dried ingredients with apple and 2 types of ginger. Do not over mix the batter, just combine together.
- Fill the muffin tins ¾ full and top each muffin with Glacè Ginger, coconut flakes and sugar.
- Bake for about 20 minutes and test by inserting a wooden skewer until it comes out clean.
- Cool in a wire rack and enjoy!
