Slow-Cooker Ginger Chicken

Recipe Slow Cooker Ginger Chicken


  • 1kg chicken thigh
  • 1/4 cup ginger marmalade
  • 1 tbsp bbq sauce
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp minced garlic


  1. Mix together all ingredients, apart from chicken, in a medium bowl. Add chicken to bowl and use a spoon to turn chicken over a few times to cover in marinade.
  2. Place into slow-cooker & cook on low for 4 hrs (or until fork tender). Remove from slow cooker and place into large container.
  3. Use two forks to shred chicken, or if you would prefer, slice chicken into pieces.
  4. Use how you desire e.g add to burgers and sandwiches, salads, as a topper to a soup, in a rice / quinoa / couscous salad.
