INDIAN STYLE PILAU RICE
Forget rice as you know it! This superb dish can be a tasty meal all on its own. Packed with flavour, spices and fresh ingredients with a subtle ginger addition of Buderim Naked Ginger pieces to create a rice that will leave your belly and taste-buds satisfied!

Serves 4-6
Ingredients
2 cups basmati rice
1 tbsp vegetable oil
1 onion, finely sliced
1 carrot, finely diced
1 tsp curry powder
1 tsp ground cinnamon
1 cup frozen peas
½ cup Buderim Naked Ginger, finely chopped
4 eggs, hard-boiled
½ cup roasted flaked almonds or cashew nuts
Method
- Cook rice following packet directions, we used rice cooker method.
- Heat oil in a large frypan or wok. Add onion and carrot and cook for 2-3 minutes or until softened. Stir in spices and frozen peas and cook for a further 2 minutes stirring continually.
- Mix in cooked rice and Buderim Naked Gingeruntil well combined.
- Serve Pilau rice topped with quartered eggs and nuts.
Helpful Notes
Tip: You can add a tin of drained lentils or chickpeas in step 3.
