GLAZED GINGER BACON
This simple, salty and sweet combination is a perfect tasty treat to start a lazy weekend. Serve with warm pancakes!
1 piece (7g) Buderim Ginger Naked Ginger
2 tablespoons Buderim Ginger Refresher Cordial
Couple or more drops chilli or pepper hot sauce
6 slices streaky bacon (or prosciutto, cut in half lengthwise or mild pancetta)
6 store bought pancakes, pikelets or drop scones OR homemade pancakes
20g to 30g butter
1 tablespoon Buderim Ginger Refresher Cordial
STEP 1 Preheat oven to moderately slow (160ºC).
STEP 2 Add cordial and a couple or more drops sauce, whisk well.
STEP 3 Dip and generously coat each bacon slice (prosciutto or pancetta) with cordial glaze.
STEP 4 Place on foil covered baking tray.
STEP 5 Bake in preheated oven – bacon about 30 minutes, (prosciutto and pancetta about 15 to 25 minutes, depending on thickness).
STEP 6 Gently warm pancakes, pikelets or drop scones as per manufacturer’s instructions. Cover with a clean tea towel to keep warm and soft.
STEP 7 In a small saucepan or microwave safe jug, gently melt butter and additional cordial until butter melts and warms slightly. Whisk gently just before serving.
STEP 8 Serve three or more pancakes, pikelets or drop scones drizzled with warmed butter syrup, sprinkle over fresh or thawed frozen blueberries, accompanied with bacon (prosciutto or pancetta).
