Chocolate Ginger Almond Biscotti

Ingredients:

  • 2 cups plain flour
  • 1 & ½ teaspoons baking powder
  • ¾ cup castor sugar
  • 3 eggs
  • 2 & ½ teaspoons vanilla extract
  • ½ cup chopped Buderim Ginger Dark Chocolate Ginger
  • ½ cup blanched almonds
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger powder

Method:

  1. Preheat Oven to 160°C
  2. In a large bowl place plain flour, baking powder, sugar, almonds, spices & Dark Chocolate Ginger
  3. Add the eggs and vanilla and mix well to form a dough
  4. Divide dough in two
  5. Place dough on a lightly floured surface and knead until smooth
  6. Shape into logs and flatten slightly
  7. Place on tray lined with baking paper and bake for approximately 35 minutes
  8. Remove from oven and allow to cool completely
  9. With a sharp knife, cut the logs into 5 mm thin slices, place on baking tray lined with baking paper
  10. Bake for 10 – 15 minutes until dry and lightly golden & crisp
