Recipe Buderim Ginger With Apple Coconut Muffin

Dried ingredients:

  • 300g. all-purpose flour
  • 75g. white sugar
  • 30g. dried coconut flakes
  • 1tsp. baking powder
  • 1tsp. baking soda
  • ½ tsp. salt

Wet ingredients:

  • 1 cup butter milk
  • 1/3 cup melted butter
  • 2 eggs
  • 1 tsp. vanilla essence

Fruit:

  • 100g. small cube of apple (any type that you like)
  • 75g. roughly chopped Buderim Dark Chocolate Ginger
  • 75g. roughly chopped Buderim Naked Ginger

Topping:

  • 50g. roughly chopped Buderim Glacè Ginger
  • Dried coconut flakes
  • Decorating sugar

Method:

  1. Lay 12 muffin cups in the muffin pan and turn the oven on to 175c fan force.
  2. Mix all dried ingredients together by using hand whisk mix them together until well combined.
  3. Mix all wet ingredients in a big bowl then pour all dried ingredients with apple and 2 types of ginger. Do not over mix the batter, just combine together.
  4. Fill the muffin tins ¾ full and top each muffin with Glacè Ginger, coconut flakes and sugar.
  5. Bake for about 20 minutes and test by inserting a wooden skewer until it comes out clean.
  6. Cool in a wire rack and enjoy!
