Recipe Apple Pear And Ginger Mini Tarts


  • 1 small apple (any type), thinly sliced
  • 1 small pear, thinly sliced
  • 2 tbsp @BuderimGinger Sweet Ginger Sauce
  • 1/2 cup @BuderimGinger crystallised ginger (roughly chopped)
  • 2 sheets of store brought puff pastry
  • 30g butter (cubed)
  • 1/2 egg, beaten


  1. Preheat oven to 200C (fan forced)
  2. Cut each sheet of puff pastry into 4 even squares (8 squares total) and arrange on baking tray
  3. Spread a thin layer of @BuderimGinger Sweet Ginger Sauce in the centre of each piece of pastry
  4. Arrange apple and pear slices (alternating) on pastry, leaving a 1cm gap on each edge
  5. Fold in each edge of the pastry to seal in the fruit, then scatter @BuderinGinger crystallised ginger and butter on top.
  6. Brush the edges with an egg wash and bake for 200C for 10 minutes, lowering to 180C and baking for another 15 minutes (until the pastry is puffed and golden)
  7. Remove tarts from the oven and brush with some more @BuderimGinger sweet ginger sauce
  8. Enjoy!
