PEACH & GREEN BEAN SALAD WITH ZESTY GINGER DRESSING

A light and zesty summer salad, perfect for entertaining!

Ingredients: 
120g Baby spinach leaves, washed
200g green beans, trimmed and blanched
150g sugar snap peas, trimmed and blanched
3 fresh peaches or pears, cut into slices
Dressing
¼ cup Buderim Ginger Refresher Cordial
½ cup natural Greek yoghurt
1 tbsp whole egg mayonnaise
Zest and juice of a small lemon
Method: 

METHOD

1) Arrange spinach leaves, beans, sugar snap peas and peaches onto a serving platter.

2) Place all dressing ingredients into a screw top jar and shake vigorously until well combined. Pour dressing over salad just before serving.

Helpful Notes: 

Tip: To blanch beans and sugar snap peas; plunge them into a pot of boiling water for 1 minute. Remove and immediately place into a bowl of ice cold water until cool. Drain and dry onto a tea towel or paper towel.
